Ice Cream Sandwiches

I think we can all agree when I say, whether ice cream is sandwiched between cookies, biscuits, wafers, or cakes, an ice cream sandwich is always a good idea. Especially when it's made with real ingredients! Creamy, dairy-free vanilla ice cream, chocolate brownie-like (raw) cookies... this really is the perfect summertime treat. Here's what you need: For Vanilla Ice Cream 2 cans full fat coconut milk 1/2 cup agave (or other liquid sweetener) 1 tsp vanilla extract For Cookies 1 cup pecans 1 cup almond flour 1 cup coconut flour 1/2 cup cacao powder, unsweetened 1/4 cup agave (or other liquid sweetener) 2 Tbsp coconut oil (can substitute date paste or nut milk—something to help the mixture stick together) Pinch of salt Here's how to...

Cookie Dough Protein Bars

Feeling peckish? What better snack is there than Cookie Dough Protein Bars?! These 7-ingredient, vegan, gluten-free, refined-sugar-free (try to say that 5 times fast) protein bars take no more than 5 MINUTES to prepare. Oh, and they taste way better than store-bought, chemical-filled alternatives. To make these bars, I used almond flour and coconut flour instead of traditional flours. So much healthier! The almond flour adds a sweet, nutty flavor, and the coconut flour helps it come together. Remember, coconut flour is very absorbent, making it perfect for recipes like this where you want that shapeable texture. I also used Jarrow Formulas Optimal Plant Proteins vanilla protein powder—I find that some protein powders can be overwhelming, but this one worked well for...

Healthy Cocoa Puffs

I don’t know about you, but growing up, I was pretty much addicted to cereal. My all-time faves were Cocoa Puffs and Cinnamon Toast Crunch. As I’m typing this, the words “the taste you can see” from the theme song are playing in my head. You see what I’m saying?  Obviously, as I got older and understood what crap actually goes into those cereals, I cut them out of my diet. But, that doesn’t mean I stopped eating cereal, hehe. I’ve got a little obsession with re-creating cereals in a much healthier way. Today, it’s COCOA PUFFS. This recipe is made with only 4 ingredients TOTAL. Who can resist that? Better yet, who would want to resist that? Here's what...

Chocolate Sesame Squares

These chewy chocolate sesame squares are a filling, nutritious snack for when you’re craving something slightly sweet, but don’t want to sacrifice your hard efforts in the gym. They’re super easy to prepare and quick to whip up, making them a perfect on-the-go snack! Not to mention, due to their high fat content (the good kind of fat, don’t worry), they’re very filling, which is always a plus in my book. While we’re on the subject of pluses, let me just say… chocolate + sesame are combined here. Yeah… delish! Drizzle a little melted dark chocolate to turn these babies into a simple but delicious dessert! Here’s what you need: 2 cups sesame seeds 1/2 cup honey (can use agave...

Maple Almond Granola

One of the most common recipe requests I get are for SNACKS. Your weight loss/weight gain goals are much more achievable when you’ve got pre-made snacks on hand. Do you struggle with what to eat at snack time? Make a large batch of this Maple Almond Granola and store it in a container for when you’re feeling peckish!  Not only does homemade granola taste way better than store-bought kinds, but also, it’s MUCH cheaper. Not to mention, there are endless combinations for you to try, so there’s no way to get bored. For today’s granola recipe, I used Chilli infused maple syrup, almond butter, oats, and chocolate chips! Here’s what you need: 3 cups oats 1 cup almond butter ½...
