Tofu Cauliflower Skewers with Almond Sauce


So, I know I normally post all these "fancy" sweet recipes, but I've decided to start posting more practical savory dishes to this blog! Sound good?

These Tofu Cauliflower Skewers are a breeze to make, and are absolutely addictive when served with this guilt-free Almond Sauce. 

I can guarantee you'll be enjoying this sauce with other recipes as well. SO GOOD.

While I used cauliflower as the vegetable for this recipe, feel free to get creative and use whichever ones you like! Bell peppers, mushrooms, zucchini... The list is endless. 

Here's what you need:

Curry Cauliflower:

  • 1 large head cauliflower
  • 2 Tbsp olive oil
  • 1 Tbsp curry powder

Tofu:

  • 4 Tbsp olive oil
  • 1 block tofu, drained, dried, and cubed
  • Salt & Pepper to taste

Almond Sauce:

  • 1/4 cup almond butter
  • 1/4 cup coconut milk
  • 2 Tbsp lime juice
  • 2 Tbsp coconut aminos
  • 1/4 tsp grated garlic
  • 1/4 tsp grated ginger
  • Salt to taste

Here's how to make it using an oven:

  1. Preheat oven to 350F. While it's heating up, cut large head of cauliflower into florets.
  2. Transfer cauliflower florets to a mixing bowl with 2 Tbsp olive oil and 1 Tbsp curry powder, and mix. 
  3. Transfer seasoned cauliflower to a baking sheet and bake on 350F until golden and slightly crisp. Set aside. 
  4. Add 4 Tbsp olive oil to a pan on high heat.
  5. Season tofu with salt and pepper, and carefully add tofu to the hot pan. If the olive oil starts to splash, cover the pan but while allowing steam to escape (leave an opening). Cook until golden on all sides, and set aside. 
  6. Add all almond sauce ingredients to a blender, and blend until smooth.
  7. Add cauliflower and tofu to skewers, garnish with cilantro, and serve with almond sauce.

Here's how to make it using a grill:

  1. Cut large head of cauliflower into florets.
  2. Transfer cauliflower florets to a mixing bowl with 2 Tbsp olive oil and 1 Tbsp curry powder, and mix.
  3. Assemble skewers--stick cauliflower and tofu alternately on skewers until you have used everything up.
  4. Pre-heat grill on high heat, grease with some olive oil, and cook the skewers for a few minutes on each side until the tofu is golden brown. 
  5. Season with salt & pepper as soon as you finish cooking.
  6. Add all almond sauce ingredients to a blender, and blend until smooth. 
  7. Garnish skewers with cilantro, and serve with almond sauce.
